Our Story

Mad Flavor is a celebration of bold taste, craftsmanship, and sustainability. Rooted in the long-standing traditions of charcuterie making, we create exceptional plant-based cheeses, vegan salami, and artisanal accompaniments using only the finest ingredients Maine has to offer. Every spread, sauce, and handcrafted bite reflects our deep commitment to quality—free from artificial fillers, yet rich in authentic flavor. Working out of Fork Food Lab in Portland, we embrace sustainability at every step, ensuring that our products honor both the environment and the art of time-honored food preservation. At Mad Flavor, we believe that plant-based eating should never mean compromising on tradition or taste—it should simply be better.

Meet Our Founder

Klajdi Plaku

Chef & Founder

Klajdi Plaku, chef and founder of Mad Flavor, traces his deep love of food back to the sun-drenched mountains of the Mediterranean, where as a child he would spend afternoons foraging wild oregano and learning the rhythms of nature's kitchen. Those early experiences rooted in him a reverence for flavor, seasonality, and the art of preserving food with care and intention.

Driven by curiosity and passion, Klajdi journeyed to Boston, where he honed his craft in some of New England's most respected kitchens, mastering both classical techniques and bold innovation. Along the way, his love of growing food and crafting beautiful, thoughtful charcuterie continued to deepen.

That passion eventually brought him to Maine, where the wild beauty of the coast and the richness of local ingredients inspired the birth of Mad Flavor. At its heart, Mad Flavor is a celebration of Mediterranean tradition reimagined with a distinctly Maine spirit—bringing together clean, plant-based ingredients, time-honored techniques, and the vibrant, local bounty of the Northeast.
